Easy Fluffy Pancakes

The consistency of the batter is everything with pancakes! If it's too runny, you're making crepes and if it's too thick, pull out the cake pans!! Get it just right and you're in for a treat! After many failed attempts at winging it, I did a little homework and came up with this for a yummy stack of goodness! Thank me later!

- Makes 8-10 small pancakes

1 cup all-purpose flour

2 tbsp white sugar

2 tsp baking powder

A pinch salt

30g melted unsalted butter (2tbsp)

200ml full fat milk (1 cup)

1 egg

Half vanilla pod

1 tablespoon vegetable oil or some cooking spray

- Turn your oven on to 100°C and place an ovenproof plate on the middle rack. You'll use this to keep your pancakes warm whilst frying.

- Mix the dry ingredients together.

- Whisk the wet ingredients in a separate bowl starting with the milk and butter and lastly adding the egg and vanilla pod.

- Now make a well in the bowl of dry ingredients and using the whisk, gently stir in the wet mixture until all combined. This won't take long and should be a pretty smooth mixture. Don't worry about the odd lump if you have it, you don't want to overwork the mix.

- Pour half the oil in a frying pan and heat until the whole pan is hot*.

- Pour in the pancake batter into whatever size circles you like using a ladle. As the bubbles start to form across the top, they're ready to turn or flip if you dare and they'll need only a minute on the other side before moving to your warm plate in the oven.

- Try making this into shapes...I used a ladle for the face and a cereal spoon for the ears. I got them perfect by just using a steady hand to pour the batter on itself rather than trying to pour into a circle. The consistency of the batter helps too.

- Once you've fried up all your batter, enjoy stacked up with your favourite toppings!


You can sub in 30ml vegetable oil for the butter and

You can swap plain flour and baking powder for self raising but you'll want 1/2 tsp baking powder to achieve the same height. Coconut sugar works too

* To test that the pan is ready, place your open palm about 2inches above the pan for 2 seconds and there should be a warm and comfortable heat emanating from the pan. If it's too hot, it won't be a welcoming heat.

P.S. If making with kids please ensure the adult does the heat test.
