I've always been a granola fan...usually whichever ones have got chocolate or berries going on in the mix but I'd never actually purchased a nutty granola as I always felt like there was no way they'd be as tasty. I tend to go for the supermarket brands but moving to Dubai I realised all I could find that was familiar was Jordan's and Lizzie's.
So began my quest for how to make granola. I headed straight for google and searched for a good recipe that I could try but I found that there were far too many and none of them gave a small quantity that I could just try out. So I found this guardian article which happens to be called "How to make the perfect granola"! I knew there had to be a way I could just DIY with the quantities.
I followed the basic composition of 'cereal base', 'nuts,seeds and fruit', 'sticky stuff and fats', 'sugar and spice' then 'baking'. I skipped the 'sugar and spice' though. I wanted it to be pretty basic and it turned out perfectly for my palate. Feel free to double the cereal base if you prefer to, I just like to have some crunch in every spoonful so I went for an equal ratio of cereal and fruit & nuts. It's also worth mentioning that you must use old fashioned rolled oats. No substitutions with the instant stuff. The fact that they take only a couple of minutes in the microwave tell me you'll get a gooey mess and I'm no scientist!!
130g old fashioned rolled oats
130g mixed fruit and nuts (cashews, almonds, hazelnuts, pistachios and raisins)
2 tbsp super seed mix (sunflower, pumpkin, flax and linseed)
1 tbsp coconut oil
1 tbsp raw honey
-Turn on your oven to 135°C
-Tip all the ingredients into a large bowl
-Using clean and dry hands, mix it all together until well coated. If your coconut oil was solid to start with, your hand mixing will melt it down and incorporate it well.
-Line a baking sheet with greaseproof paper or foil and spread the mix onto the tray.
-Bake for 25-35mins* until golden.
-Leave the oven door open and let it cool before storing in a jar or an airtight container.
*If doubling the quantity, increase the oven temperature to 150°C to cook for the same time. Ovens vary so you'll need to check after the first 25mins.
