I love salads and as the days are sunny and bright currently in London, we're making the most of it and enjoying salad lunches. Today's salad was so easy to throw together you'll wonder why you don't put mango in all your salads! This is great on it's own and even better with chicken!
1 ripe mango 120g spinach (a few large handfuls) 100g cherry tomatoes 130g olives 100g greek feta
Your choice of chicken, beef, fish... protein basically!
I used Tesco finest chilli infused gordal olives in sweet flame peppers. Label pictured.
-Rinse and pat dry the spinach and tomatoes then halve the tomatoes.
-Peel and chop the mango, discarding the stone.
-Chop the feta into bitesize chunks and then toss it all together with the mango, tomtoes and spinach.
-Top with the olives, emptying the olive oil from the packet into the bowl and it's ready to serve!
